1 chicken breast, diced
1 raw egg
1 cup cooked rice
1 cup broccoli, chopped
1 tbsp olive oil
shredded cheddar cheese
1 cup soy milk
2 tbsp vegan butter
2 tbsp flour
Boil chicken and rice until the chicken is almost fully cooked, then add broccoli and simmer until the chicken is finished.
Heat soy milk in a medium saucepan over low heat. Once hot, add vegan butter and flour, whisking vigorously and constantly until a roux forms. Allow to simmer until sauce forms.
Let the meal cool and then add the eggs and oil.
